
Beef Stroganoff – 5280 Culinary Recipe
We picked the best dish to ring in fall with… Beef Stroganoff. We use some fresh Colorado Beef, Crimini Mushrooms, Sweet onions and more to create this soon to be family favorite. So grab your favorite cast iron Dutch oven (9 qt or bigger) and let’s get cooking

RECIPE – SERVES 6 People (with leftovers)
¼ Cup Oil, Olive Blend
1 Cup Onion, Yellow Sweet, Diced medium
1 Tbsp Garlic, Fresh
3lbs Beef Stew Meat, 1” cubes
2 Tbsp Rub A Dub Seasoning
¼ Cup Oil, olive blend
2 lbs Cremini Mushrooms, Sliced thick
¼ – ½ Cup Flour, All Purpose
¼ Cup Worcestershire Sauce
1 Sprig Thyme, fresh
1 Sprig Rosemary, fresh
2 ea Bay leaves, Dried
1.5 Qts Beef Stock
½ Cup Sour Cream, Room Temperature
1lb Flat Egg Noodles, Cooked and held warm
Taste Sour Cream – Over the top of finished stroganoff as garnish
Cooking Instructions:
- Heat your cast iron dutch oven on the stove top, on high heat, allow heat for 10 minutes
- Add the oil
- Slowly add the beef and saute on high heat for 2-3 minutes, season with rub a dub and continue to saute the beef until caramelized. Remove from the dutch oven to a plate
- Add the oil
- Add the mushrooms and cook on high heat until well browned or caramelized
- Add the beef back to the mushroom mix
- Sprinkle the flour over the top of the beef/mushroom mixture and mix in well, cook the flour, beef and mushrooms over medium heat for 5-7 minutes
- Add the Worcestershire, thyme, rosemary, bay leaves and beef stock
- Over medium heat, and with the lid partially open, cook this mixture for 15-25 minutes or until the mixture has started to thicken to your desired consistency
- Add the room temperature sour cream and mix in well
- Adjust seasoning if desired
- Turn off the heat and serve over a bed of warm egg noodles
- Garnish with more sour cream and chopped parsley
